Roses are not only beautiful, but when their petals are coated in sugar, they also make for a delicate little snack.
I made these beautiful pink, candied rose petals as part of my Taste of Nature food demo last Sunday for which I also served lindenflower fizz, ground elder pesto and nettle cheese. My stall was part of the annual open day of a cheese and dairy farm near where I grew up. As this open day was also part of a regional food festival, I saw this as a perfect opportunity to give people a little taste of nature by serving them things that aren’t usually seen as food. These sweet, crispy rose petals went down a treat with all the kids, but would also be great as an original cake decoration. Make sure to use aromatic roses that actually smell like roses. And if the taste of your petals is a bit bland, you can always cheat and add a little bit of rosewater.

Ingredients:
clean, organic rose petals
egg white
white caster sugar
optional: a sprinkling of rose water
- loosely beat the egg white
- dip a petal in the egg white and then dip it in sugar
- lay all the petals out on a sheet of baking paper and leave to dry overnight.

Yup 🙂 and quite a refreshing flavor for intense summers (my recommendation : please try rose flavored milk, if you ever come across one or if you’re a vegan then a refreshing rose sherbet will do) – that’s if you haven’t already done so ..
