I know this is hardly a recipe, but can we just take a minute to appreciate the beauty that is these bacon-fried egg sandwiches.
All the credit goes to my boyfriend who is an expert when it comes to creating this symbiotic fusion of bacon and egg.
If you want to make this you need:
Two slices of dark wholegrain bread
4 rashers of thin streaky bacon
2 free-range eggs
cracked black pepper
Toast your bread. In a hot frying pan, fry the bacon rashers for a bit (use 2 slices per egg). Take the first egg, then gently crack it in between the first 2 bacon slices, so that the yolk is touching the pan. Repeat with the second egg and the other two slices. Fry till they are just set. Season with freshly ground black pepper and gently slide on top of your toast. Eat for breakfast or lunch.
